I use cold chopped butter to meld the dough, sprinkles of ice cold water as you work it
Take any old apple, wherever you find them. My key is after peeling and slicing, I give them 7 minutes of microwave time before finishing, a little head start on the oven. Make the crust thick, pile the apple filling high, then top the crust with strips from another rolled pie dough.
It works, in a moment of terror, bake apple pie.
